Since a young age, Dan has had a passion for beer. He has been an avid homebrewer since 1996, specializing in old style ales and lagers, and recently received education in brewing technology at the Siebel Institute in Chicago. His favorite varieties are English ales (blonde, mild, porter, stout, ESB, brown ale, IPA) German lagers and Belgian ales (strong ale, double, triple, trappist/abbey). Coming from a scientific background, Dan loves to experiment with different ingredients and yeast strains to create new flavors and different variations on classic beer styles. It has always been his dream to run a small neighborhood brewery like those common to European communities where folks from the surrounding village would congregate and enjoy some fresh ales. Kate also shares a deep passion for ales and ciders. Her favorite varieties are English ales, Belgian ales, especially IPAs, and dry ciders.
